Finnish Oven Pancake: PANNUKAKKU

My first memories of this dish was when we were living in the big side of Grandma and Grandpa Daine's house.

Preparation Time: 25 minutes
Serves: 4 people

3 eggs
1 cup milk
1/4 cup flour
2 tablespoons sugar
1/4 teaspoon salt

1. Beat the eggs in a bowl with mixer until fluffy.

2. Add milk, flour, sugar, and salt- beating consistently.

3. Pour into two 8" round cake pans lined with waxed paper and buttered. (About 1/3" deep)

4. Bake at 425 degrees for 15-20 minutes.

5. Turn out onto a serving dish and peel off the waxed paper.

6. Serve hot with whipped cream, ice cream, fresh fruit, syrup, etc.

You may make this ahead of time and reheat.
