Shelley's Lemon Squares

Shelley's Lemon Squares

Serves: 9 Squares
Bake: 350
Time: 1 1/2 hours

Crust:

1/2 cup unsalted butter, softened
1 cup unbleached flour
1/4 cup powdered sugar
1/4 teaspoon lemon extract
pinch of salt

1. Preheat oven to 350 degrees.

2. Thoroughly butter an 8" square pan.

3. With an electric mixer, cream all ingredients until soft & smooth.

4. Press dough evenly into pan & bake 20 minutes. Meanwhile, make the topping.


Topping:

2 eggs
1 cup sugar
1/4 teaspoon lemon extract
Juice and Zest of one lemon
1/4 cup unbleached flour
1/2 teaspoon baking powder
Powdered sugar

1. With electric mixer, beat eggs well; gradually add sugar, until mixture is thick.

2. Gradually add other ingredients except powdered sugar.

3. Continue beating until crust comes out of the oven.

4. Pour lemon mixture over crust, return it to oven & reduce heat to 325 degrees.

5. Bake 30-35 minutes until golden.

6. Cool 20 minutes, cut into squares, remove from pan & sprinkle with powdered sugar.
