Frozen Peaches

The best way to use up a few boxes of fresh peaches! Perfect on angel food cake, Pavlova, pannukakkua, pancakes, waffles, ice cream, and straight from the bowl.

Frozen Peaches
1 medium case peaches
5 c. Sugar
1 can crushed pineapple
1 c. Pineapple juice
6 oz can frozen orange juice
Juice of 4 lemons
1/4 bottle fruit freeze (found at any drug store)

Mix all together. Scald 6 peaches at a time in boiling water for 1 minute, place immediately into cold water to shock. Peel and slice. Put into liquid mixture, place in lint cartons or freezer bags (don't over fill) and freeze. Yields about 12 quarts.

Serve slightly frozen.

Sometimes I find then to sweet (depending on the peaches) and will occasionally limit the sugar or omit the pineapple.
