Shelley's Thai Turkey Lettuce Wraps
Preparation Time: 25 minutes
Serves: 6-8
1 1/2 pounds ground turkey
1 small onion, chopped
1 chopped red or yellow pepper
1 tablespoon garlic
1/4 cut fresh ginger
1/2 cup fresh cilantro
1 bottle peanut sauce
1 1/2 ounces sliced almonds
1 cup slivered/shredded carrots
4 cups cooked rice
1 head of large leaved lettuce
1. Brown ground turkey
2. Drain and add salt and pepper, onion, garlic, pepper, ginger, cilantro.
3. Pour peanut sauce and almonds on top. Mix. Simmer 20 minutes on low heat, stirring occasionaly.
4. Serve in lettuce leaves topped with rice and grated carrots. Fold like a taco and enjoy!
